Chef at the world’s largest and Europe’s first underwater restaurant, we join him as he explores the jagged Norwegian coast in search of authentic ingredients.
The Michelin-starred Under (meaning ‘Wonder’ in Norwegian) dining room is submerged more than 5 metres below the surface of the sea. Modelled on a sunken periscope, the ever evolving seabed is on view to diners through a huge glass wall. When not cooking, Nicolai spends days with his team foraging the local landscape for fresh ingredients.
